Kylie Kwong  |  Billy Kwong - $110
It Tastes Better
Kylie’s philosophical preference is for organically produced food and if the product comes in from overseas, that it is part of a fair trade agreement where workers are paid a fair wage. This book will be Kwong’s fourth.

Colin Holt & Phillip Mitchell  |  Hudson Meats - $225
Hands-On - Pork
In class, Colin and Phillip will be showing how to break down a whole pig. All students will receive a barrel of pork, which they will be shown how to break down into a pork rack. Students will be going through the process of scoring and tying the rack properly, and will also learn how to make a rolled loin with the pork fillet.

Winter Lunch Tasting Menu
Join Matthew and me for a private lunch at Balzac.
He will present a winter lunch tasting menu that highlights his favourite dishes. The recipes, lunch, wine and opportunity to meet the chef are all inclusive. Places limited to 35.

Return from Sardinia
Giovanni and I took a small group to Sardinia in May and this class will be a reflection of our trip and the food we experienced.

Presentation
This outstanding chef will help you put the fine food aspect into your cooking. Learn the tricks of the trade and skilful plating of food – it’s all about presentation.

John Lanzafame |  Lanzafame Trattoria - $175
Hands-on Pizza
Due to demand being so high – John will present this class for the sixth year in a row. Pizza making is a skill that can only be learned in this hands-on method.
Come and learn from the master and take pizzas home.

To Start
The Bentley has had a facelift for 2010. The class will concentrate on starters which will have the “Wow” factor to make your entertaining super special but achievable in the home kitchen. Brent’s clever ideas with food bring art and science to the table. The result is spectacular.

Nonna Cucina
By popular demand, “Grandma in the Kitchen” returns.
Nonna will put Danny through his paces. Traditional meets modern, two different takes on the food of Italy.

Hands-on Sour Dough
We are extremely lucky to have David, co-owner of the Bourke Street Bakery and co-author of the book by the same name, run this hands-on class for us. Learn the intricacies of sour dough bread. Not only will there be plenty to taste, hot from the oven, but you will be able to take home and bake.

Simon Hopkins Tribute Lunch
Simon Hopkins is acclaimed as one of the best food writers of our time. His latest book, “Week In Week Out” is an outstanding example of his skills. Alex and Rachel have been greatly influenced by this man and this will be reflected in this class as they prepare a sit-down lunch for a limited number of people at Accoutrement.

Tasmanian Produce
Hugh is an all-time favourite of mine. Winner of Best Regional Chef, is now the Executive Chef of the new and exclusive Saffire Freycinet in Tasmania. He will feature superb Tasmanian produce.

Dietmar Sawyer  |  Berowra Waters and Ad Lib - $99
Neighbourhood Bistro
Dietmar has opened a new neighbourhood bistro in Pymble called Ad Lib and it is this style of food that will be demonstrated in the class.

Inner West Comes North
I am very happy to welcome Alex to Accoutrement.
The success of Glebe Point Diner has prompted Alex to open a new restaurant in Neutral Bay. This class will be based on his signature dishes adapted for home. Alex is one of Sydney’s young rising stars.

China Doll’s Way with Seafood
Frank’s class was one of the best classes in 2009 and I highly recommend this class for those that want to improve their modern Chinese techniques.

Sean Moran  |  Sean’s Panaroma  - $120
Lunch at Sean’s Panaroma
Sean has agreed to host another Chef’s Table as last year’s private Thursday 4-course lunch had sold out within the first week of publication. The recipes, lunch, wine and opportunity to meet the chef are all inclusive. Places limited to 35.

The Boys from the Northern Beaches
The northshore is now the lucky host to both Giovanni and Alessandro. This class will show you Giovanni’s Sardinian influence up against Alessandro’s Lombardy background. New recipes but back by popular demand.

Book Now – Pay Later
If you book more than any four classes, pay 50% deposit now and final payment will be due one week prior to each class.

Bring a Friend
If you book more than six classes, you may bring a friend to one of the classes as my guest. This class must be selected when you book.
